Help on these blocks can be obtained by right clicking on the block in the Simulink library browser or in a model window. However, in general, the blocks in the Extras library are provided on a "as-is" basis. They are provided as examples of commonly requested functionality that can be done in Simulink.
If you would like to know how these blocks were created, we suggest you look under the mask (single click on the block, then chose Edit and select "Look Under Mask"). For information on which parameters are expected or returned you will need to look at the actual implementation which, in some blocks, is driven by S-functions.
